Baked Brie with Berries and Walnuts

·

This recipe is featured in the 2020 Holiday Cuisine and Cocktail Recipe Guide made in collaboration with Barry Johnson of Bartender Barry.

They say there’s a cheese for everyone! While I used to be a skeptic, I am now confident that a good brie will always have a place in my heart. A perfect accompaniment to any charcuterie or cheese board, brie is mild in flavor, creamy in texture and offers versatility in pairing options. Each of these factors make it an ideal base cheese for a holiday appetizer.

This quick and easy recipe is ready in under 30 minutes and features a round of goat cheese brie drizzled with honey and topped with sweet mixed berry preserves and salty walnuts. The goat cheese brie is more mild than a brie made with cow milk, allowing any flavors you top it with to really shine. Once baked the honey and mixed berries begin to meld perfectly with the creamy melted cheese creating a sweet balance of flavor with the walnuts adding a touch of crunch. Serve the baked brie as soon as it comes out the oven with crusty bread or crostini. For an extra special accompaniment this dish can be paired with my Bacon-wrapped Wheat Crackers.

An added bonus, my friend Barry Johnson of Bartender Barry created the perfect cocktail, Thy Cup Runneth Over to sip on while you indulge in this appetizer. Grab the recipe below.

Baked Brie with Berries and Walnuts

Time: 20 Minutes | Prep Time: 5 Minutes | Cook Time: 15 minutes

Ingredients

  • 16 oz Round of Brie
  • 1 tablespoon of Honey
  • 1/4 cup Mixed Berry Preserves
  • 1/4 cup Walnuts
  • 1 teaspoon Flaky Sea Salt (optional)

Instructions

  1. Preheat the oven to 375 degrees. Line a small oven-proof bowl or baking sheet with parchment paper.
  2. Remove brie from the packaging, and slice off the top to remove the white rind. Place brie on a small baking sheet or small ovenproof bowl that has been lined with parchment paper. (If using a bowl, be sure the bowl is slightly larger than the round of brie).
  3. Drizzle top of brie with honey, before spooning mixed berry preserves onto the middle of the brie. Using the back of the spoon, gently smear mixed berry preserves until evenly covering the top of brie. Top with walnuts.
  4. Place in oven and bake for 15 minutes until soft. Remove from oven and carefully transfer to plate or serving board. (Using the parchment paper to lift the baked dish is helpful).
  5. Optional. Top with a teaspoon of flaky sea salt.
  6. Serve immediately with sturdy crackers, apples, or small slices of crusty bread.
